Cookie Exchange

In December, we met at Leah's lovely abode. The sup-sup-supper club decided to break from the ingredient regulations and instead do a cookie exchange. We all enjoyed stuffing ourselves with cookies so much that we didn't have room in our tummies to drink the made-from-scratch-hot-chocolate Mary Kay made. Oh well....good thing winter is long- some other time!

The great thing about the cookie exchange is that we all were able to take enough home with us to share with our family, roommates and co-workers. AND the night wouldn't be complete without Leah giving us all a little gift! Last year, she gave us candles and this year we all got great kitchen utensils! Although it is so like Leah to do that, we didn't see it coming! What a great surprise!

Take a look at the pictures (there are not that many because like I said, we were stuffing ourselves!)

    2 boxes of Andies Mints
    INSTRUCTIONS
Heat 1 1/2 cups of cho chips over low heat. Stir constantly until melted. Cool to room temperature but not until firm. Beat butter, sugar, Vanilla till light and fluffy. Beat in eggs and melted chocolate until light and fluffy. Stir in flour , baking soda and salt. Stir in 2 1/2 cups of chocolate chips. Drop by big spoonfuls on ungreased cookie sheet. Bake 12-14 mins. cool 1-2 mins on sheep before putting on cooling rack. While on cookie sheet PUT half or a whole Andies Mint on top of the cookies..... then take fork and swish it around till it gets all hot and melted all over the top of the cookie. Sometimes I take a little piece and I shove it into the cookie so it goes in the middle too.
